Have you ever tried potato candy? What, you’re thinking ewwww? Surprise, surprise - it’s very good! Although we’d have it occasionally throughout the year, it was one of those treats we eagerly anticipated having during the holidays.
Potato candy is 1 cup of mashed potatoes (real, not instant), mixed together with 1 cup of powdered sugar and a splash of vanilla, rolled flat between waxed paper, smeared with a layer of peanut butter, rolled up into a log, chilled and sliced. Very easy to make, and very good to eat, too. It doesn’t taste like potatoes in the very least.
Throughout the years, it became a family tradition. My youngest brother carries on the tradition every Christmas, making several batches of the candy. Sometimes he shares it, too. And you know what? Growing up, he was like Mikey - hated everything! But he sure loves potato candy.
A Google search proved to me that there are, apparently, many others who love potato candy, too. Even found several pictures (see image above) and recipes, some with variations. Here’s a few of them:
So, next time you make mashed potatoes, set a cup aside, and try this simple and tasty treat. It’ll become a favorite for you and your family, too.
